Ingredients
3/4 cup | Real mayonnaise (not fat-free) | 1 tsp. | real lime juice | 1 tsp. | hot paprika | 1/2 tsp. | ground cumin | 1/2 tsp. | minced garlic | 4 cups | water | 1 qt. | cooking oil for frying. | 2 lbs. | fresh yuca, scrubbed, peeled and cut into 2x1/2-inch pieces |

Instructions
In a medium bowl, mix the mayonnaise, lime juice, garlic,paprika and the ground cumin; cover and chill. Bring water and salt to a boil in a 3 quart saucepan. Add the yuca and boil for 30 minutes or until tender. Drain and chill.
Heat the oil in a sauce pan over medium heat and fry the yuca in two batches for about five minutes or until crisp. Drain on paper towels. Add more salt if you like and serve with the now chilled spiced mayonnaise.
