Ingredients
1 (2) | chicken, cut up | 2 tsp. | finely chopped garlic | 1 cup | dry white wine | 1/2 cup | fresh chopped parsley | 1/2 cup | chopped red bell pepper | 2 cups | chopped onion | 2 tbsp. | oil | | Cayenne pepper, to taste | 2 tbsp. | soy sauce | | Salt, to taste |

Instructions
Rince the chicken and pat it dry. Season it with the soy sauce, cayenne pepper and salt. Set it aside to let the flavors blend for a few minutes.
In a large pan heat the oil and saute the onions and the peppers and parsley for a few minutes. Add the wine and the garlic; stir well, then add the chicken parts. Mix well over medium heat and cook slowly for about 2 hours stirring occasionally (do not cover). Add some more wine or water if needed.
Serve over cooked white rice.

I found this recipe many years ago when I went to Texas on a trip. I made it at home one night when I got back. It is now one of my comfort foods.
