Spring Pea Dip with artichokes & mint

This is a quick and easy recipe to make that you can frozen or fresh shelled peas in.

4 to 6 servings



2 cups fresh shelled peas, blanched (Or 2 cups frozen peas thawed )
1/2 cup drained marinated artichoke hearts, oil reserved
1/4 cup crumbled feta cheese
3 Tablespoons chopped fresh mint
3 Tablespoons fresh lemon juice
1 Tablespoon olive oil or
1 tsp. minced garlic
Salt and pepper to taste


In a food processer add the peas, artichokes hearts, 1 teaspoon saved oil from artichokes,feta cheese,mint,lemon juice olive oil or tahini and the garlic. Process until chunky and season with salt and pepper to taste.
Cover and chill before serving.
