I made this for a picnic lunch on the train! I only used 5 oz. of blue cheese and I thought that was enough. (not the biggest fan of blue cheese) Plus, I could only find Kraft blue cheese crumbles in the store, which was 5 oz., not a cup. But that worked for me. My 3 guests thought it was yummy and asked for the recipe!

Instructions
Preheat a griddle pan over medium-high heat. Brush red onion with some olive oil. Grill onions for about 2 minutes on each side, until brown. Add salt and pepper to taste and let cool.
Mix blue cheese, sour cream and thyme in a small bowl to blend. Spread blue cheese mixture over the 4 wraps, making sure to cover up to the edges (it helps to hold the sandwich together like a glue). Top blue cheese mixture with the now cooled grilled red onion, radicchio, then the smoked turkey. Spread the mustard over the top.
Roll the wraps up tight making sure that the edges are folded in. Cut each sandwich in half. Wrap each tightly in plastic wrap and refrigerate for at least 2 hours.

I tried to come up with a tea sandwich and ended up with this and it tasted great. So here it is. It makes 4 sandwiches or cut them in half or even into 1 inch slices for an appetizer.
