Ingredients
3 lbs. | rolled loin of pork, boned | 2 tbsp. | caraway seed, toasted | 3 tbsp. | kosher salt | 1 tsp. | dried thyme | 1 tsp. | paprika | 1/2 tsp. | marjoram, dried | 1/2 tsp. | ground black pepper | 4 cloves | garlic, minced | 2 tbsp. | vegetable oil |

Instructions
Preheat oven to 350°F. Cut 3/4 inch slits in pork loin. Stuff caraway seeds & garlic into the slits. Mix in a small bowl the thyme, paprika, marjoram, salt and pepper to make a rub. Put the rub on the stuffed pork loin. Brown the pork loin in a large pan with the oil until browned about 5-7 minutes. Tranfer to a roasting pan and place in the hot oven for 1 hour and 45 minutes, or until a meat thermometer reads 165°F.

This is one of the best pork loin recipes that I have made. I serve this with a good pork gravy sauce on the side. And don't forget the apple sauce as well!!
