Ingredients
2 cups | all-purpose flour | 1 tbsp. | baking powder | 1 tsp. | ground cinnamon | 1/4 tsp. | salt | 2 | whole eggs | 1 cup | milk | 1/4 cup | vegetable oil | 1/2 cup | brown sugar, packed | 1 tsp. | vanilla extract |
Topping
1/4 cup | butter, melted | 1/4 cup | brown sugar, packed | 1 cup | chopped pecans |

Instructions
Preheat oven to 350°F. In a large bowl combine flour, baking powder, cinnamon and salt. In another bowl, beat the eggs, milk, oil, sugar and vanilla until smooth. Stir into the dry ingredients just until moistened.
Into each greased muffin cup, spoon in 1 tsp. melted butter, 1 tsp. brown sugar and 1 tbsp. chopped pecans. Now fill each muffin cup about 1/4 of the way full with the batter. Bake in the now preheated oven for 25-30 minutes.
Invert pan over a plate or some foil let stand for 2 minutes.

I am a chef and not much of a baker. So these are easy to make even for me. Try them while they are still warm.
