Orange & Fennel Chicken Salad

1/2 cup good mayonnaise
1/4 cup plain yogurt
2 tbsp. juice
Zest of half an orange
4 cups of diced cooked chicken(I use roasted with skin off)
1 cup halved red seedless grapes
3/4 cup diced fennel bulb
1/4 cup toasted slivered almonds
2 tbsp. chopped fennel fronds
1 tbsp. chopped fresh tarragon
Kosher salt & pepper to taste


Whisk mayonnaise,yogurt,orange juice and zest together in a bowl. Stir in the chicken, grapes, diced fennel, almonds, fennel fronds, and tarragon. Season to taste with kosher salt & pepper. Serve over a bed of greens or cover and chill.

I made this as a special where I work. People are now asking for it to be on the everyday menu. And it is quick to make.
