Orange & Fennel Chicken Salad
|1/2 cup ||good mayonnaise|
|1/4 cup ||plain yogurt|
|2 tbsp. ||tbsp.orange juice|
|Zest of half an orange|
|4 cups ||of diced cooked chicken(I use roasted with skin off)|
|1 cup ||halved red seedless grapes|
|3/4 cup ||diced fennel bulb|
|1/4 cup ||toasted slivered almonds|
|2 tbsp. ||chopped fennel fronds|
|1 tbsp. ||chopped fresh tarragon|
|Kosher salt & pepper to taste|

Whisk mayonnaise,yogurt,orange juice and zest together in a bowl. Stir in the chicken, grapes, diced fennel, almonds, fennel fronds, and tarragon. Season to taste with kosher salt & pepper. Serve over a bed of greens or cover and chill.
