Low Carb Fresh and Tasty Macaroni Salad

4 to 6 servings



2-1/2 cup cooked whole wheat low carb elbow macaroni (such as Dreamfield's)
2 hard-cooked egg whites or
1 hard-cooked egg, chopped
1/2 cup finely diced celery
1/2 sm. onion, chopped
1/4 cup chopped red bell pepper
1 sm. roma tomato, chopped
1/4 tsp. paprika
1 tbsp. chopped sugar free bread and butter pickles or
sugar free relish
1/2 cup mayonnaise
1/4 tsp. kosher salt


Combine ingredients and chill before serving.

Author's Comments

I originally made this for a low fat diet several years ago using whole wheat elbow mac. It is quite good and easily makes the change to low carb. However, you can use regular ingredients if that's what you like.
