Lemon Polenta Waffles






3 eggs
1-1/4 cup buttermilk or
low-fat yogurt
1 cup all-purpose flour
1/2 cup cornmeal
2 tbsp. granulated sugar
1 tbsp. grated lemon peel
1 tsp. baking soda
1 tbsp. butter or
margarine, melted


In bowl, whisk eggs with buttermilk. In second bowl, combine flour, cornmeal, sugar, lemon peel and baking soda. Stir dry ingredients into egg mixture. Whisk in melted butter or margarine. Heat waffle iron for approximately 5 minutes, or according to manufacturer's directions. Spoon batter into centre of hot grill and close. Cook for a couple of minutes, or until waffles are done.

Waffles are popular with adults and kids alike, and now you can buy waffle irons in many different shapes and sizes. If you don't have a waffle iron, they can be made as pancakes (the recipe will make about 32 3-inch or 7.5 cm. pancakes). Serve them with maple syrup or cinnamon sugar.
