Ingredients
1 lb. | boneless, skinless chicken breast, cut into 1-1/2-inch cubes | 1/4 cup | fresh lemon juice | 3 tbsp. | olive oil | 1 piece | fresh ginger, peeled and grated | 1 clove | garlic, minced | 1/2 tsp. | black pepper | 1/4 tsp. | salt | | Wooden skewers, soaked in water |

Made this for four, two adults and two kids. Everyone enjoyed it. Will certainly be making this again!

Instructions
Mix the salt, pepper, garlic, ginger, olive oil and lemon juice in a medium bowl. Put the cubed chicken in the lemon mixture and toss to blend. Cover with plastic wrap and chill for one hour to let the flavors blend.
Set oven to broil. Thread the chicken onto wooden skewers. Toss out the remaining marinade. Cook the kabobs for about 11-13 minutes on each side or until the chicken is lightly brown and fully cooked. Serve hot or warm.

It only has 7 ingredients. Try it with some homemade fried rice.
Don't forget to soak the wooden skewers in water for 30 minutes!
