Ingredients
1/4 lb. | of pancetta or | 4 | inch cubed | 2 cloves | of garlic, sliced | 1/2 | onion diced or | 1 | leek sliced thin | 1-1/2 cup | peas | 1 cup | of white wine | 2 cups | of bechamela | 1/2 cup | of grated Grana Padana or | 1/4 cup | of Pecorino |

Instructions
In a sauté pan over a medium heat, brown the pancetta and drain off most of the fat except 1 tablespoon. Add in the garlic and onion and sauté till soft and translucent. Next add in the peas and wine and reduce the liquid by 3/4ths. Add the bechamela and simmer for about 5 minutes, add in the Grana Padana or Pecorino and serve over your favorite pasta or pork roast
