Date Nut Bread

Ingredients
8 oz. | pitted dates | 2 tbsp. | butter | 1 cup | soft brown sugar | 1 tsp. | baking powder | 1 cup | boiling water | 2 cups | bread flour | 1 dash | of salt | 1/4 tsp. | bourbon vanilla extract plain will also do. | 1/2 cup | chopped and toasted pecans | 2 | egg whites. |

Instructions
Chop the dates in a food processor until it sticks together and forms a ball.
Put the chopped dates in a mixing bowl with the butter, brown sugar and then the boiling water and just stir to break up the ball of dates and let sit for 10 minutes. Then add the rest of the ingredients. Mix until smooth. Pour into a greased and floured loaf pan.
Bake at 325F. for 1 hour until a knife pulls out cleanly. Let cool for 10 minutes then turn out on to a cooling rack for an hour to cool.

My mother use to make this when my sister and I were kids for when we came home from school and she served it with a big glob of cream cheese on it. And a big glass of cold milk.
