Crostini con San Marco/ Crostini with Capers and Mozzarella

Ingredients
1 loaf | bread cut thin into slices no thicker than your pinky with crust removed | 4 | fresh sm. mozzarella cheeses in the water, halfed | 2 | tomatoes, sliced thin | 3 tbsp. | chopped capers that have been drained and rinsed, and chopped | 4 | filets of anchovies (optional) | | Chopped basil |

Instructions
Preheat the oven to 450F. Cut the slices of bread in half. Place the Mozzarella and ½ an anchovy fillet on each piece of bread. Sprinkle some of the chopped cappers on top of the crostini and top with a tomato slice. Bake until the cheese is melted and the bread is lightly toasted. Garnish with the basil.

This is a very simple appetizer, if your have a toaster oven, use the toaster oven, works really well
