Chorizo and Kale Soup

2 lbs. fresh chorizo sausage, sliced 1/4-inch thick
2 md. onions, chopped
2 bunches kale, washed and chopped
2 qt. beef stock
2 qt. chicken stock
1 cup white or
red wine
1/4 lb. butter

Instructions

Melt the butter in a large stockpot. Add the onions and chorizo and sauté until the chorizo is browned and the onions are tranlucent. Deglaze the pot with the wine and bring to a simmer. Add both stocks and return to a simmer. Add the chopped kale and simmer for 20 minutes.

It sounds easy and it is! But this is one great soup to eat as well. I make this at work when I am in a hurry.
