Ingredients
1 tbsp. | olive oil | 3/4 cup | smoked sausage, sliced | 12 | md. shrimp | 2 tsp. | fresh garlic, minced | 1/2 tsp. | cayenne pepper | 2 tbsp. | dry sherry | 1/3 cup | half & half | 1/3 cup | chicken stock | 1/4 cup | scallions, chopped | 2/3 cup | Parmesan cheese | 1-1/2 pint | cooked fettuccine |

Instructions
In a large pan over medium heat, brown the sausage in the olive oil; then add the shrimp and cook until the shrimp turns pink. Stir in the garlic and cayenne; cook just until you can smell the garlic. Use the sherry to deglaze the pan. Add the half & half and chicken stock. Heat to a slow boil. Then add the chopped scallions. Use the green parts only for color. Add the parmesan cheese and stir until thick about 1-2 minutes. Serve over warm fettuccine. Garnish with more chopped scallions.
