Zucchini Pancakes

3 md. zucchini, shredded
2 md. carrots, shredded
1 md. onion, chopped
2 eggs
1/2 cup Bisquick
1/3 cup Parmesan cheese
Pepper, cayenne, garlic powder, basil to taste
(cayenne, garlic powder, basil to taste)


Mix everything together, let it sit 15 minutes. (Zucchini juice will settle to the bottom of the bowl. Avoid using it.) Melt some butter in skillet and drop big spoonfuls of mixture in it. Cook on each side until firm and lightly browned.
