Instructions
Cook whole zucchinis in boiling water until braely tender, about 10 minutes. Cut in half length-wise; scoop squash from boats and mash, Cook sausage and onion; drain. Stir in mashed zucchini. Reserve 2 tbsp. parmesan; mix remaining ingredients. Spoon into zucchini boats. Place in shallow baking dish. Sprinkle with remaining parmesan cheese. Bake at 350°F for 25-30 minutes.
