Zippy Corn Chowder

A potluck favorite with a kick!

1 md. onion, chopped
1 md. green pepper, chopped
1/2 tbsp. butter
1 can (14-1/2) chicken broth
2 lg. red potatoes, chopped
2 tsp. Dijon mustard
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. crushed red pepper flakes
1 can corn
1 can creamy corn


Sauté onion and green pepper first. Combine with remaining ingredients and heat.

This has proven a favorite, especially, for some odd reason, of pregnant friends! It's great to share in the office, not only because it's delicious but is affordable and can be made vegetarian.
