Zesty Carrots



6 servings



6 to 8 carrots, cooked and cut into strips
1/4 cup water or
cooking liquid from carrots
2 tbsp. grated onions
2 tbsp. prepared horseradish
1/2 cup mayonnaise
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 cup Saltine cracker crumbs
1 tbsp. butter, softened
1 dash paprika
Chopped parsley, for garnish (optional)


Arrange carrot strips in shallow casserole. In small bowl combine water, onion, horseradish, mayonnaise, salt and pepper. Pour over carrots. Top with a mixture of cracker crumbs, butter and paprika. Bake at 375°F for 15 to 20 minutes. Garnish with parsley.
