I picked this up a month ago in Greece. It is specific to the region known as Zagoria up between the Pindos Mountains and Albania and is from the Hotel Elati in that area.
This is an excellent recipe to make for the "Mom, I need to take some Greek food to school" at 9:00 the night before. It was very easy to make, smelled wonderful, and the entire 6th grade loved it! I can't wait to make it this weekend.
This appetizer reminds me of a cheesy Dutch Baby pancake. I probably should have baked mine a little longer so it wasn't so doughy in the middle. The dish is simple and mild-tasting.
