Ingredients
1 tbsp. | butter, divided | 4 (8 oz. each) | salmon steaks | 1 tbsp. | lemon juice | 1/2 tsp. | salt | 1/4 tsp. | black pepper | 1/4 tsp. | dried oregano | 1/4 tsp. | garlic powder | 1/4 tsp. | crushed red pepper flakes | 1/2 cup | dry white wine |

Instructions
Lightly grease a 13x9 inch baking dish with 1 tsp. of the butter. Arrange salmon steaks in single layer in prepared dish and sprinkle with the lemon juice, salt, pepper, oregano, garlic powder and pepper flakes. Allow to sit at room temperature for 30 minutes.
Preheat oven to 375°F. When ready to cook, pour wine around the steaks in the dish. Bake, uncovered, for 15 to 20 minutes, or until fish is firm and opaque and just begins to flake, basting twice.

This is a quick and easy but elegant and delicious entree from my Freshwater Angler cookbook, America's Favorite Fish Recipes. I included some different prep methods, though; I like the lemon juice and herbs to sit on the fish for a bit before cooking.
