Venison Breakfast Sausage Patties

A recipe for venison sausage patties, made with ground deer meat and ground pork.

1 lb. ground venison
2 lbs. ground pork
1-1/3 tbsp. salt
2 tsp. black pepper
1 tbsp. sage
1 tsp. fennel seeds
1 tsp. smoked paprika
1 tsp. dried oregano
1/2 tsp. mustard powder
1/2 tsp. ground cumin
1/2 tsp. cayenne powder


Mix together the ground venison and the ground pork. In a separate bowl, mix the spices together. Once mixed, combine the spices with the ground meats.

Spread out meat on a cutting board, so that it fills the cutting board and is 1/4-inch in thickness. Use a cookie cutter to create circular patties. Using a spatula, remove the patties to wax paper.

Cover top of patties with wax paper. Cover and leave in the refrigerator, or place in zipped plastic bags if storing for later use.
