Unleavened Cheese Rolls

A moist tasty bread ideal for holy days when leavening is not to be used.

32 rolls on L. & 48 rolls on R.
1 C.butter - 1 1/2 C.
2 C.(16oz)sm.curd cottage chs. - 3 C.(24oz)
2 C. plain flour-sifted - 3 C.
1/2 tsp.salt - 3/4 tsp.

Instructions

Cream butter(3min.), then stir in cottage chs. & salt. Add sifted flour & mix evenly. Flour hands and divide dough equally into 4(32) or 6(48)pieces shaping into flatenned balls & wrapping into clingfilm. These need to chill at least 3hrs.
When ready, lightly dust w/flour & roll out each disc to 1/4" & cut into 8pc. Roll into a crescent shape starting w/large end.
Place on a cookie sheet & Bake 350*F/180*C for 30min. or till a light golden brown. Drizzle or brush w/a melted butter.

Children like them sprinkled w/powdered sugar and adults enjoy a bit of garlic powder &/or parmesan chs.sprinkled on theirs. Experiment and share how to make them better!
