Ukrainian Potato Babka

2 eggs, separated
2 cups hot mashed potatoes
1/3 cup hot cream or
rich milk
1/2 cup cottage cheese
1 tbsp. butter
Salt

Instructions

Beat the egg yolks into the potatoes. Add the remaining ingredients except the egg whites. Beat vigorously until light. Beat the egg whites until stiff, and fold the into the mixture. Spoon the potatoes lightly into a buttered baking dish. Bake in a hot oven (400°F) for 15 minutes, or until well puffed and delicately browned.

The name babka refers not only to a cake bread but also to various puffy, egg-rich dishes like this one.
