Ukrainian Cossack's Kisses (Macaroons)

4 egg whites
1-1/2 cup sugar
1 tbsp. lemon juice
1-1/2 cup chopped walnuts
Candied cherries


Put the egg whites, sugar, and lemon juice into the top part of double boiler, and beat over boiling water from 8 to 10 minutes. Remove the mixture from the range and add the nuts. Drop from a spoon onto a greased baking sheet in round mounds. Parchment paper is good to use for this recipe if you have available (grease paper). Press a candied cherry into the center of each macaroon. Bake in slow oven (300°F) until set and delicately browned.
