Turkey Barley Tomato Soup




1 lb. lean ground turkey
3/4 cup sliced carrots
1 md. onion,chopped
1 clove garlic, minced
1 stalk celery, chopped
1 pkg. reduced sodium taco seasoning
3-1/2 cup water
1 can (28) diced tomatoes, undrained
3/4 cup barley
1/8 tsp. oregano


In a medium sized pot, cook turkey, carrots, onion, celery, garlic and 1 teaspoon taco seasoning over medium heat until meat is no longer pink; drain well. Stir in remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 45 minutes or until barley is tender.
