Tropical Ricotta Fruit Whip



2 to 4 servings



1 cup (250) Tre Stelle® Traditional Ricotta Cheese
1 tbsp. (15) freshly squeezed lime juice
1 container (100) banana or
coconut yogurt
1/4 cup (50 mL) canned coconut milk (optional)
1 ripe banana, peeled and sliced
1 mango, peeled and cut into 1/4 ” cubes
1 tsp. (5) lime zest, grated
1/4 cup (50) sweetened shredded coconut
1 tbsp. sweetened coconut, toasted, for garnish if desired


Combine Ricotta, lime juice, yogurt, coconut milk, shredded coconut and process in a blender and until smooth. Stir in banana slices. Refrigerate for one hour or until ready to use.
Spoon into small serving dishes; top with mango cubes and lime zest. Garnish with shredded coconut if desired.

Makes 2-4 servings
