Tropical Ricotta Fruit Whip

Ingredients
1 cup (250) | Tre Stelle® Traditional Ricotta Cheese | 1 tbsp. (15) | freshly squeezed lime juice | 1 container (100) | banana or | | coconut yogurt | 1/4 cup | (50 mL) canned coconut milk (optional) | 1 | ripe banana, peeled and sliced | 1 | mango, peeled and cut into 1/4 ” cubes | 1 tsp. (5) | lime zest, grated | 1/4 cup (50) | sweetened shredded coconut | 1 tbsp. | sweetened coconut, toasted, for garnish if desired |

Instructions
Combine Ricotta, lime juice, yogurt, coconut milk, shredded coconut and process in a blender and until smooth. Stir in banana slices. Refrigerate for one hour or until ready to use.
Spoon into small serving dishes; top with mango cubes and lime zest. Garnish with shredded coconut if desired.
Makes 2-4 servings
