Tomato Shrimp Scampi for Two

4 oz. fettuccine (or your favorite pasta)
2 tbsp. extra virgin olive oil
2 cloves garlic, minced
2 cups chopped plum tomatoes
1/2 cup cooking sherry
1/4 cup lemon juice
1/2 tsp. sugar
1/2 lb. cooked shrimp
Tabasco sauce, to taste
Fresh chopped basil
2 scallions, chopped
Grated fresh parmesan cheese

Instructions

Cook pasta according to directions on box. Sautee garlic in olive oil in large skillet over medium heat for 2 minutes. Add tomatoes; cook 5 minutes. Add cooking sherry, lemon juice, sugar; simmer 6 minutes. Add shrimp and Tabasco. Cook until shrimp is hot, about 2 minutes. Stir in basil and scallions. Toss with pasta and top with parmesan cheese.

Serve in shallow bowls with crusty bread, salad and a good chardonnay.
