1 pie shell
4 lg. tomatoes, peeled and sliced
1/2 tsp. dried basil
Salt and pepper, to taste
1/2 cup mayonnaise
1 cup cheddar cheese, shredded

Instructions

Preheat oven to 350°F. Bake pie shell for 10 minutes. Into baked shell, add tomatoes, salt, pepper and basil. In a small bowl combine mayo and cheese. Spread this mixture over tomato. Bake pie at 350°F for 30 minutes.

Good when served as a side dish or as a light main course with a garden salad.

I love this! I also use some mozzarella and parmesan sometimes.
