1-1/2 lb. plum tomatoes
2 tbsp. onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh basil, chopped
2 tsp. red wine vinegar
6 tbsp. olive oil
4 slices crusty Italian bread
Salt and pepper, for seasoning
Parmesan cheese, for topping

Instructions

Cut tomatoes in half and squeeze out seeds and juice. Chop tomatoes into small dice; place in bowl. Add onion, garlic, basil, vinegar, half of the olive oil and salt and pepper to taste. Let stand at room temperature for about 1 hour. Drain liquid. On barbecue grill or under broiler, toast bread on both sides until golden brown. Quickly brush one side of each slice with remaining olive oil. Spoon tomato mixture on top. Either serve immediately, slices cut in half, or return to heat to melt a little Parmesan cheese on top.

I have a recipe very close to this it is truely a fresh and delicious start to a meal or a party take along, especially during the summer months!! I just toast the bread rounds and serve the "sauce" in a bowl for guest to spoon over bread, I do not top with cheese.

This was also my first time making Bruschetta...my husband is a big fan. He (and our guests) loved this recipe so much, he went out and bought 3 more pounds of tomatoes that same night so I can make more the next day (like have nothing better to do than chop tomatoes all day);-) We didn't serve it with the parmesan cheese either and allowed guests to spoon their own servings. It was an all-around hit!

My family are not lovers of raw onions, so I tried this recipe but without the onion and melted marble cheese on it rather than parmesan. It was fabulous...my husband claims "better than the restaurant's!". I guess this is bruschetta "caker style". Thanks!

If the kids won't eat it, try cooking up some pepperoni separately for topping -- and change the cheese from Parmesan to Mozzerella. They'll love it!

we make this frequently - we use grape tomatoes, fresh mozzarella (sliced thinly), and we actually add sweet peppers to the mix and saute for a few minutes before serving. Then add all components to a platter and let everyone forage! It's always a big hit!
