1 cup | halved cherry tomatoes | 3/4 cup | diced fresh pineapple | 3/4 cup | diced rockmelon | 3/4 cup | seedless grapes | 3/4 cup | halved strawberries | 1/2 cup | diced cucumber | 2 | spring onions, finely sliced | 1 tbsp. | John West Lemon Grass | 2 cans (4-3/8 oz. each) | John West Smoked Tuna Slices, drained | 2 tbsp. | finely shredded mint | 2 tbsp. | chopped toasted peanuts |
Dressing
2 tbsp. | lime or | | lemon juice | 2 tsp. | brown sugar | 2 tsp. | John West Chill | | Salt, to taste |

Instructions
Place tomatoes, pineapple, rockmelon, grapes, strawberries, cucumber and spring onions into a large bowl and mix well. Fold through lemon grass, tuna and mint. Add dressing. Mix together gently, sprinkle with peanuts and serve at once. Serve as an entree or part of a Thai meal.
Dressing:
Place all ingredients into a small bowl and mix until sugar is dissolved.
