| 1 lb. | skirt steak | | 1/4 cup | finely sliced shallots | | 1/4 cup | finely sliced lemongrass | | 1/2 cup | sliced cucumbers | | 1 tbsp. | chopped spring onions | | 1/2 cup | mint leaves |
Dressing
| 2 tbsp. | sliced garlic | | 3 | hot chili peppers | | 1/4 cup | lime juice | | 4 tbsp. | fish sauce |

Instructions
First, prepare the dressing. Pound the chili peppers and garlic well in a mortar; remove and mix with lime juice and fish sauce.
Grill beef to medium-rare; cut into thin strips about 1 inch wide. Toss the beef in the dressing.
Place the beef on a serving plate. Sprinkle with mint leaves, shallots, lemongrass, and cucumber. Serve.
