Texas Chicken Burgers

1 egg
1-1/4 lb. ground chicken
1/2 cup all-purpose flour
1 tbsp. unsalted butter
2 tbsp. vegetable oil
1 cup tomato salsa
1/4 cup cilantro, chopped


Beat egg and salt and pepper to taste in a bowl until well blended. Add ground chicken and mix just until combined. Form into 4 patties about 3/4 inch thick. Mix together flour and salt and pepper to taste. Dredge patties in seasoned flour. Melt butter in oil in a heavy nonstick skillet over medium high heat. Cook burgers about 5 minutes per side, turning once, until golden brown and meat springs back when touched lightly in center. Chicken should be white throughout but still juicy. Drain burgers on paper towels. Serve with salsa and cilantro.
