Ingredients
8 | boneless and skinless chicken thighs. (readily available in New Zealand) | 35 pkg. | dried onion soup mix | 14-1/8 oz. | can tomatoes in juice | 2 tsp. | sweet basil | 2 tbsp. | white wine vinegar | 1 cup | mixed dried fruit such as raisins, apricots and prunes | 1 cup | sauvignon blanc or | | other dry wine | 1/4 cup | honey | 1 cup | apple juice concentrate or | | fruit juice will suffice as a substitute | 1 tsp. | dried chicken stock | 1/2 tsp. | salt | 1 | onion chopped | 2 tbsp. | each of cornflour (cornstarch) | 2 tbsp. | water |

Instructions
Place all ingredients (except cornflour and water) in large nonstick frypan or skillet and bring to boil then simmer for 20 minutes. Add cornflour and water mixture then continue simmering for 30-35 minutes until chicken is cooked and casserole has thickened and reduced slightly in volume. Serve with mashed potatoes or rice and favourite selection of greens and other vegetables.

this chicken is actually two recipes combined initially as an experiment, but now as a really tasty casserole. i suppose you could say this comes from New Zealand, though indirectly. this might look like a lot of effort, but really it's just the long list of ingredients and is definitely worth it putting in the effort. if you would like it to have a bit more of a kick, just add some of your favourite chilli spice flavourings.
