Sweet Red Pepper Sauce

1 tsp. olive oil
1 sm. onion, minced
1 red bell pepper, minced
1 can (1 lb.) diced tomatoes, undrained
1/4 cup tomato juice
1/2 tsp. salt
1/4 tsp. cayenne pepper
2 tbsp. minced parsley

Instructions

Heat oil in pan over medium heat. Add onion and ref pepper; cook until tender. Stir in tomaties and juice; cook until sauce thickens, about 5 minutes. Add salt, cayenne and parsley. Stir to blend. Purée in food processor until smooth.
