1/2 lb. | smoked turkey sausage, cut into 1/4-inch slices | 1 cup | onion, diced | 1 cup | carrot, diced | 3/4 cup | celery, thinly sliced | 3 cups | fat-free chicken broth or | | water | 2 cups | sweet potatoes, diced and peeled | 1 tsp. | dried oregano | 1/2 tsp. | coarsely ground black pepper | 1/4 tsp. | salt | 2 (14 oz. each) | tomatoes, unsalted, undrained, and coarsely chopped | 1 can (14 oz.) | Great Northern beans, rinsed and drained | 2 bunches | fresh spinach, coarsely chopped |

Instructions
Combine first 4 ingredients in a Dutch oven over medium-high heat; saute 7 minutes or until sausage is browned. Add chicken broth (or water) and next 6 ingredients (water through beans). Bring to a boil, cover, reduce heat, and simmer 30 minutes or until vegetables are tender. Stir in spinach, cook an additional 2 minutes. Serve.
