Soak potatoes in 2 quarts of ice water for 1 hour; drain and pat dry. Heat oil to 375°F in an electric skillet or deep-fat fryer. Fry potatoes, seven or eight slices at a time, until golden brown. 1-2 minutes, turning once. Drain on paper towels; sprinkle with salt. Cool.
