Sweet Potato Casserole

Ingredients

Ingredients

3 cups cooked, mashed sweet pototes
1 cup sugar
1/2 cup butter
1/3 cup milk
2 eggs, beaten
1 tsp. vanilla

Topping

1 cup light brown sugar
1/3 cup butter, softened
1/2 cup flour
1 cup chopped pecans

Instructions

Mix top 6 ingredients and put in a baking dish. Mix topping ingredients together and sprinkle on top. Bake at 350°F for 25 minutes.

Author's Comments

This can be used as a casserole or some people like it as a dessert. If you like the top crunchy make a double batch. Great for the holidays!!

This recipe is extremely good. I was trying to find a recipe that was like the sweet potato cassarole that I had tasted at Damons and this one was exactly what I wanted. Everyone raved about how good it is.

I agree - it satisfies the Damon's dessert cravings! Awesome with a scoop of vanilla ice cream. One important point, though: the size of baking dish wasn't specified and I had to size up from the one I started with (an 8" square). Needs a bigger and/or deeper pan than that.

I want to try this recipe for the upcoming holidays. When you say to double the batch for a crunching topping, is that the entire recipe or just the topping? Thanks. Sorry if it's a dumb question.

Becky - I think she means to double the topping ingredients. Doubling the recipe would give you the same consistency... Cheers!
