Ingredients
8 | lg. very sweet plantains | 4 lbs. | ground beef | 1 | sm. onion, diced | 1 | sm. green pepper, diced | 3 cloves | garlic, minced | 2 tsp. | sofrito | 1/4 cup | halved green olives | 8 oz. | tomato sauce | | Adobo for seasoning | 3 | egg whites, beaten | 4 cups | mozzerella cheese |

Instructions
1st Layer:
Cut sweet plantains long and thin. Fry them until lightly brown. Fill bottom of your casserole dish and brush with egg whites.
2nd Layer:
In frying pan, saute onion, green pepper, garlic, olives and in a small bit of oil until lightly brown. Add ground beef, sofrito and tomato sauce and fry until beef is browned. Lay a portion on top of the sweet plantains.
3rd Layer:
Add one cup of mozzerella cheese for every layer.
Repeat layers 2 more times and top it off with cheese. Put casserole in oven for 10 to 15 minutes on 350°F. Serves up to 8 people. Buen Provecho!
