Sweet Macaroni Salad

1 pkg. (1 lb.) elbow macaroni, cooked, rinsed and cooled
4 carrots, shredded *
1 lg. green pepper, diced
1 md. red onion, diced
2 cups mayonaise
1 cup sugar
1 can (14 oz.) sweetened condensed milk
1 cup cider vinegar
1 tsp. salt
1/2 tsp. black pepper


Mix prepared vegetables and pasta in a large bowl. Mix remaining ingredients well in a smaller bowl and pour over salad. Stir well and refrigerate overnight. Stir before serving.

Absolutely delicious anytime of year! At Christmas, I use green and red peppers for more color.<br />

I always seem to have to tinker with a recipe to get it to my liking. I used no sugar in this recipe, other than the sweetened condensed milk; and only 1/2 cup vinegar. I also used only 2 carrots and added black olives. I received many compliments!
