Sweet and Sassy Chicken Legs

5 lbs. chicken leg quarters
1 to 2 cup chopped onions
2 cups pineapple juice

Seasoning Mix

3 tsp. salt
2 tsp. paprika
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper

Instructions

Preheat oven to 350°F. Combine dry spices in a small bowl. Pour pineapple juice into a separate small bowl and dip leg quarters into the juice. Place legs on a sheet of foil. Sprinkle seasoning on both sides of the legs. Place leg quarters into shallow pan and sprinkle with onions. Bake uncovered for 1 hour. The onions will carmelize and turn very dark and that's ok. They will taste wonderful.
