2 tsp. cumin
2 tsp. sugar
2 tsp. chili powder
2 tsp. salt
2 tsp. pepper
1 tsp. ground cloves
cayenne pepper, to taste

Instructions

Combine all ingredients and use as a rub for whitefish, salmon or chicken.

Author's Comments

This perks up all kinds of chicken and fish; it's especially good on Chilean sea bass, orange roughy and even salmon.

I used it on chicken breasts and then BBQed it. Turned out great. Maybe I'll add a little garlic or a twist of lemon for variation next time.

I used it with Honey BBQ sauce, added 2 extra tsp of sugar and 2 tsp. of garlic powder and it was great.
