1/4 cup butter or
margarine, softened
1/2 cup sugar
1 egg
1/4 tsp. vanilla extract
1/4 tsp. lemon extract
1-1/4 cup all-purpose flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
4 oz. cream cheese, softened
1/4 cup confectioners sugar
1 cup whipped topping
1 firm banana, sliced
1 cup sliced fresh strawberries
1 can (8 oz.) mandarin oranges, drained
2 kiwifruit, peeled and thinly sliced
1/3 cup fresh blueberries

Glaze

1/4 cup sugar
1/4 cup orange juice
2 tsp. cornstarch

Instructions

In a mixing bowl, cream butter and sugar, beat in egg and extracts. Combine flour, baking powder, baking soda and salt, add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into a greased 12-inch or 14-inch pizza pan. Bake at 350°F for 12-14 minutes or until light golden brown. Cool completely, in a mixing bowl beat cream cheese and confectioners sugar until smooth.

Spread over crust. Arrange fruit on top. Combine glaze ingredients in a saucepan, bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in refrigerator.

This is a very light and flavorful dessert! I've made it several times. However, I highly recommend doubling up on the cream cheese filling. It doesn't seem like enough to spread over the dough.

This dessert is delicious. But the only thing I have to complain about is the amount of sugar. Our nation is home to the most overweight people on the planet. People are trying to make differences in their lives and make themselves as healthy as can be, at least they should be. I have a friend who eats only unhealthy food it's disgusting. We were at a sleepover at another friend of mine's house and when her non offered us strawberries she said "no thanks." But then I was like "Rachel I love how your mom puts sugar on the strawberries it's so good!" and my other friend says: "oh then actually I will have some." She's the heaviest girl in our grade... school (unincluding teachers) It's gross. So all I'm saying is try to cut back on the sugar, maybe use a sugar substitute instead like Splenda. Overall it is very delicious.
