Put 3 cups of yogurt in freezer for twenty minutes to pre-chill.
Puree 2 of the peaches leaving skins on (remove pits first). Slice remaining peach (leaving skin on) and cut up into small pieces.
Slice vanilla bean in two and scrape out seeds into large mixing bowl. Toss bean pod in trash (or put 1 tsp. of vanilla in bowl).
Add pre-chilled yogurt and chopped peach, and peach puree to mixing bowl. Add 3 packets of Stevia.
Pour into Cuisinart Ice Cream/Frozen Yogurt Maker. Process for 20 minutes until frozen. Serve and freeze any leftovers. If you want a firmer dessert, freeze for several hours, then serve.
For leftover frozen yogurt, you will need to take out of the freezer 30 minutes before serving to get it soft enough to dish out.

Stevia is a sweet tasting herb that in this recipe takes the place of a sweetner. It is widely used in South and Central America and even thought to have curative properties!
