1 can chicken or
vegetable broth
1/2 cup finely chopped onion
2 cups cubed squash (or yams, potatoes, or
combination)
1 cup sour cream (regular or
fat-free)
Salt and pepper

Instructions

In large saucepan, bring broth to boil. Add onions and squash. Simmer until tender. Mash. Add sour cream until smooth. Add salt and pepper to taste.

Author's Comments

I fondly call this "Squish". It's a great alternative to mashed potatoes.
