9 oz. yellow split peas, soaked overnight
15 oz. canned tomatoes, with liquid reserved
1/4 cup salad oil
1 clove garlic
Salt
Pepper
1 dash cayenne

Instructions

Drain peas, then boil in fresh unsalted water fo 30 minutes or until soft. Purée tomato and can juices. Place in a saucepan; bring to the boil and stir until reduced by two-thirds. Cool. Purée peas and beat in the tomato mixture, lemon juice, oil and garlic. Season with salt, pepper and cayenne. Cover and chill.
