Spinach Salad with Orange Dijon Vinaigrette

3 tbsp. vegetable oil
3 tbsp. orange juice, frozen conentrate
1 tbsp. white wine vinegar
1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
4 cups torn spinach leaves or
salad greens
4 cups torn Bibb lettuce
2 cups sliced mushrooms

Instructions

In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine.
