2 lbs. | chopped spinach | 1 lb. | Feta cheese, crumbled | 8 oz. | Cheddar cheese, chopped or | | grated | 1 | lg. onion, chopped | | Filo dough | 3 tbsp. | olive oil | | Butter | | Herbs and spices, to taste (dry mustard, oregano, sage, salt and pepper) |

Instructions
Cook spinach until done, strain thoroughly. Saute onion in olive oil. Lightly coat a large casserole dish with butter. Layer strips of filo dough in dish (6 sheets with melted butter brushed between layers). Combine spinach, cheeses, onion and herbs and spices; spread mixture in casserole dish.
Put filo dough on top, tuck in edges and drizzle butter on top. Slit top of dough to let steam escape. Bake at 400°F for 20 to 30 minutes until dough browns.
