Southwest Taco Dip




1 can (1 lb.) refried beans
3 md. avocados
2 tbsp. lemon juice
1/4 tsp. black pepper
1-1/4 cup sour cream
1 pkg. (1 oz.) taco seasonong mix
1 sm. onion, chopped
3 tomatoes, chopped
1/2 cup sliced olives
1 lb. freshly grated Cheddar cheese


Spread refried beans on a large plate. Mash avocados in a separate bowl. Add lemon juice and pepper. Mix well and then spread over refried beans. Combine sour cream and taco seasoning mix. Spread over refried bean mixture. Top with tomatoes, onions, olives and cheese.
