1/2 cup butter or
margarine, softened
1 cup packed brown sugar
1 egg
1-3/4 cup all-purpose flour
2 tsp. baking powder
3/4 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves
1/4 cup milk
1-1/2 cup zucchini, grated
1/2 cup walnuts, chopped
1/2 cup raisins
1 tsp. grated orange peel

Instructions

In a mixing bowl, cream the butter and brown sugar; add the egg and mix well. Combine the dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, nuts, raisins, and orange peel. Drop by teaspoonfuls 2" apart onto greased baking sheets. Bake at 350°F. for 12-14 minutes or until edges are lightly browned and cookies are set.

These are pretty easy to make, and my husband loves them. They live up to the name - soft & spicey, not overly sweet. My husband loves them. They are a favorite at my house. Be careful not to overbake - they are moist when done right, but seem to dry out quickly if you overbake.
